Not really the height, but the angle is adjustable, pull your carpet back from around the base of the gas pedal and you will see 2 bolts There are 3 different sets of holes you can use to move the base forward or backwards to change the pedal angle.
On 89 and earlier the "footrest" on the far left is also adjustable for three different angles.
Clutch pedal has adjustable pressure spring, this is adjusted by a wingnut.
